@Luvsmyfam

There is absolutely no reason at all that goulash cannot be frozen; just package it well and use within a month or so.

If it's left over, we eat it. Most food taste just as good as the first night you make it and some foods taste even better as leftovers. If you've had it for three days in a row and have a good deal left, freeze that and pull it out to heat up a week or two later.

I cannot even imagining not eating leftovers. It wouldn't have been allowed when I was growing up.  We didn't waste food and we didn't want to cook every meal, so it was eat it or go hungry.  If you liked it yesterday, you'll like it today.

Still my motto.  Picky isn't allowed here!  LOL!!!  And we don't cook stuff we don't like and we don't let it go bad, so what's not to love about leftovers?

I'll never understand the "I don't eat leftovers" comments.  It's not as if it sits out overnight and then gets eaten 24 hours later.  What I don't ever do is eat food after the 2nd day.  I grew up that way and if it's cooked on a Monday, Wednesday is the absolute deadline for being consumed.  If it's not eaten by the second day, it's usually frozen or tossed.  The third day is the hard deadline.  Some people at work say they cook food on Sunday and bring it the whole following work week and that makes me nauseous.

Yes---DD and I live together and I cook enough for a meal and then for her to take to work for lunch. Not a fan of leftovers much, but some things do taste better as leftovers like lasagna or chili.

Well yes.  While there are only 2 in my household, I do make extra servings.  Yesterday I made breaded porkchops, enough for 2 more meals. Usually I divide left overs, vacuum pack and freeze.  DH asked me to leave enough for another meal this week.

As I posted Sunday,I made a huge casserole of goulash for myself and grandson(who is now staying with me thru the week)He has ate this once,and I've taking it to work twice for my lunch at work.Im getting alittle tired of it,and I know it can't be froze.My frugal side,tells me I can dump it so I guess I will continue to eat

???   OF COURSE it can be frozen.  Who told you that you couldn't?  (Stop listening to them, lol).

Either freeze in little single portions or freeze the whole thing and thaw it by putting it in the fridge overnight in a couple weeks.  Good as new.

Absolutely.  However with just two of us here if making a casserole I usually make a 8x8 instead of a 9x13.  I don't usually like it a third day in a row, so would freeze any others. With smaller portions made usually not leftovers by day 3. We try to eat what we cook. Everything is so much more expensive these days we try not to waste it.

Yes!

I purposely plan so that there are leftovers. Hub is meat and potatoes, I'm fish and salad. I make a meatloaf for him and he happily enjoys it for several nights.

All veggies and salads are made daily but his "main course" is made with extras to spare!
