DECEMBER RECIPE GAME

Happy Black Friday Recipe Friends!!!

 

Our friend MTC has been under the weather so I figured I would help her out & get the December Game started. I KNOW she would want it to keep going until she gets back.

 

First off, I'm not near as fun & funny as she is - that's a fact!

 

Second off, she is a pro at this so please forgive me because I am not!

 

PLEASE COME BACK SOON MTC, because I do not know what I am doing & you are so good at this game!

 

 

Hard to believe it is almost December & Christmas is right around the corner! I know we all have our stand-bys for the holidays but hopefully we can come up with some new & different recipes to add to the regulars.

 

Appetizers, dips, sides, mains, soups, stews, desserts, beverages....... Come one - come all!!!

 

Thank you @walker for the last post in November, or the last one at this point at least.

Cranberry Gelatin Salad

 

1 (16 oz) can Jellied Cranberry Sauce

1 (16.5 oz) can pitted dark sweet cherries, drained

1 (10-1/2 oz) can crushed pineapple with juice

1 (6 oz) package cherry gelatin

2 cups boiling water

1 cup chopped PECANS

 

Melt cranberries over low heat in medium saucepan.

 

Cut cherries into pieces and add them to melted sauce.  

 

Stir in pineapple with its juice.  

 

Remove mixture from heat.

 

Put cherry gelatin in bowl and pour boiling water over it. Stir until all gelatin has dissolved.

 

Add gelatin mixture to the cranberry mixture and stir.

 

Add the NUTS (optional if you don't care for nuts).

 

Mix all together and pour into a 9" x 13" pan.  Chill until set.

I didn't have any leftover Ham or Turkey....but I have a great soup for ham!

 

Garbanzo Bean Soup

Ingredients

  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 2 oz. EVOO
  • 1 Chorizo (dried in package) sliced thin.
  • 1/2 pound smoked ham, cubed 1/2”
  • 1/4 teaspoon paprika
  • 1 14 oz can Garbanzo Beans
  • 2 medium potatoes, diced ½”

Directions

In large saucepan, saute onion and garlic in EVOO.
Add Chorizo  (sliced thin), smoked ham and paprika. Fry until onions are tender.

 Add entire contents of Garbanzo Beans can (including liquid) and also
1 1/2 cans of water.

Bring to a boil.

Add potatoes, salt and a pinch of Vigo Flavoring and Coloring to obtain desired golden color.

 

Lower heat and cook for 15 minutes or until potatoes are tender.   

Serve with Crusty Cuban bread!

Oh, this soup sounds great!!! And easy which is a plus.

 

I think I will make it this week/weekend - gotta check what I have on hand.

 

It turned really cold here so this will taste wonderful!

Vintage FRUIT COCKTAIL Cake

 

1 (15 oz) can FRUIT COCKTAIL

1 cup all purpose flour

1 cup sugar (can reduce to 3/4 cup)

1 large egg

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup brown sugar (or less)

 

Preheat oven to 300 degrees and grease or spray an 8" square baking dish.  Mix flour, granulated sugar, baking soda and salt together.  Add the egg and FRUIT COCKTAIL along with juices from can.  Mix well.  Pour batter into prepared baking dish.  Sprinkle brown sugar over batter.  (Option...add chopped pecans and/or coconut on top.)

Bake for 60-70 minutes or until toothpick inserted in center comes out with just a few moist crumbs.  Cool for 10-15 minutes before serving.  Serve alone or with whipped cream or ice cream.

This is a repeat recipe for me...posted last year.  Always good and easy to fix.  Serves 4 (or 2 with leftovers...maybe...first time I made it DH and I almost ate whole thing 😆)

 

CHICKEN Salad Bake

 

2 cups cooked CHICKEN, cubed

1 cup celery, chopped

1/2 cup onion, chopped

1 (5oz) can sliced water chestnuts, drained

1/2 cup shredded cheese

1/2 cup mayonnaise

1 tablespoon lemon juice

1/2 teaspoon salt

1/8 teaspoon pepper

1 small can shoestring potatoes*

 

Combine CHICKEN, celery, onion, water chestnuts and shredded cheese; set aside.  Mix together the mayonnaise, lemon juice, salt and pepper.  Add to CHICKEN mixture and combine well.  Put into a 2 quart casserole.  Top with shoestring potatoes.  Bake at 400 degrees for 20-25 minutes.

 

* can substitute crushed potato chips

Well, the year will pass soon....December almost done....and almost done with this thread here it seems.  I want to thank @ChiliPepper for helping us out in absence of momtochloe....I hope she is doing better. Thanks to all who have posted recipes and kept this going.  My final recipe for 2024.....maybe we will get new interest in 2025.

 

New recipe I tried over holidays.  Pretty easy and tasty.  Good for large group but I cut it in half for less.

 

POTLUCK RICE PILAF

 

1/2 cup butter, cubed

4 cups uncooked long grain rice

2 quarts water

2 tablespoons chicken bouillon granules*

10 green onions, thinly sliced

2/3 cup soy sauce

1 cup slivered almonds, toasted

 

In a large Dutch oven, melt butter.  Add rice, cook and stir for 3-5 minutes or until lightly browned.  Add water and bouillon; bring to a boil.  Reduce heat, cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.  Remove from heat; stir in the onions and soy sauce.  Cover and let stand for 5 minutes.  Stir in almonds and serve.  

* I could not find granules but found chicken bouillon powder so used that instead.  Also, I did not toast the almonds. 

CORRECTION....I did buy "Chicken Granulated Bouillon"...so, not powder but was "granules".

This is one of those copycat recipes, & is attributed to the now defunct Pizzeria Uno's.

Uno Deep Dish Pizza

 

Ingredients

  • olive oil or cooking spray
  • 1⅛ teaspoons active dry yeast
  • 1 cup warm water (110 to 115 degrees)
  • cups all-purpose flour
  •  cup olive oil
  • 12 ounces mozzarella cheese sliced
  • ½ pound Italian sausage mild
  • 15 ounces canned tomatoes
  • 1 teaspoon dried oregano, crushed
  • 1 teaspoon dried basil, crushed
  • ¼ cup Parmesan cheese, grated
  • 4 ounces sliced mushrooms optional
  • 2 ounces chopped bell pepper optional

Instructions

  1. Cook sausage until browned and crumbly.
  2. Generously brush a heavy 10-inch round cake or springform pan with olive oil or cooking spray.
  3. In a large mixer bowl, sprinkle yeast into warm water and stir until yeast is dissolved.
  4. Add 1½ cups of the flour, ⅓ cup oil, and ½ teaspoon salt. Beat at low speed 30 seconds, scraping bowl constantly.
  5. Beat for 2 minutes at high speed, scraping bowl often. Add in as much of the remaining flour as you can while beating the dough.
  6. Cover and let the dough rise in a warm place until double. Punch down. Let rest 5 minutes
  7. Preheat oven to 500 degrees.
  8. Place the dough into the pan. Using oiled hands, spread dough evenly over the bottom and partially up sides of the pan.  
  9. Cover the pan and let the dough rise until nearly double, about 30 minutes.
  10. Arrange cheese slices in a ¼-inch thick layer on dough.
  11. Gently press the sausage on the cheese.
  12. Using your hands, gently crush tomatoes into small pieces over the sausage.
  13. Sprinkle oregano, basil, and Parmesan on top.
  14. Bake at 500 degrees for about 25 to 30 minutes or until the edge of the crust is crisp and golden brown.
  • If desired, sprinkle the pizza with sliced mushrooms or chopped green pepper during the last few minutes of baking time.
  • Let the pizza stand 5 to 10 minutes before cutting.
