Spinach Salad


Baby Spinach
Red Onion sliced
Mandarin Oranges
Almond Slices
1 tsp Sugar (optional)

Place Spinach on plates.
Top with Mandarin slices and onion slices.
Add toasted almonds on top.
Serve with dressing.

I like Raspberry Vinaigrette dressing on this salad.

An old family Christmas Cookie recipe....must go back to the 1950's....my mother would make cookies in early December and package them tightly for Christmas enjoyment.

Chocolate Balls

2 cups flour

1/2 cup cocoa

1 cup butter, softened

1 tsp. vanilla

1/8 tsp. salt

2/3 cup sugar

2 cups of chopped walnuts

Mix all ingredients together well, form into balls, place on cookie sheet and bake at 350 for 20 minutes. Let cool and roll in powdered sugar.

NEXT INGREDIENT: BROWN SUGAR

Shrimp Creole

1/4 lb. bacon, chopped

1 medium onion, chopped

3 ribs celery chopped

1 clove garlic, crushed

1 bell pepper, chopped

1 (8oz.) bottle clam juice

1 cup chicken broth

1 (1lb. can) tomato puree

1 Tblsp. finely chopped fresh parsley

1 Tblsp. fresh or freeze-dried chives

1 Bay leaf

1 tsp. brown sugar

1/2 tsp. black pepper

1 tsp. Tabasco

1 tsp. lemon juice

Dash of worcestershire sauce

1-2 lbs raw shrimp, peeled

Fry bacon in heavy pot.

Add onion, garlic, celery and bell pepper and cook till onion is translucent.

Add remaining ingredients, bring to a boil, lower heat and simmer uncovered, stirring occasionally, until sauce is thickened, 30-45 minutes.

When sauce is desired thickness, add shrimp & simmer until just cooked, about 5 minutes. (do not overcook!)

Serve over rice.

Jiffy Corn Casserole

1 can whole kernel yellow corn, undrained
1 can cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted

Mix all together and pour into large, lightly oiled casserole dish. Bake at 350°F for 55 to 60 minutes.

I've never made this recipe, but I'm going to try it soon.

I made this last year and froze the leftovers just fine. The recipe I got here last year was the exact ingredients but it was called Spoon Bread. Sorry, don't remember who posted it.

Anyways, I would consider it more of a bread...than what I would think of as a casserole side dish. We cut it in squares and served it as a bread you pick up...an amped flavor version of an EASY Corn Bread. I kinda think of casseroles as something I have to eat w/ utensils...LOL.

So it froze and reheated just great!

To make it healthier, use lowfat dairy, omit the meat, and top the pasta with a layer of spinach, then the sauce.

Creamy, Meaty Pasta Casserole

Ingredients:

olive oil for sautéing

2 Italian sausage links, casings removed

1/2 pound ground meat, any kind

24 oz. jarred marinara

1 can of stewed tomatoes or diced tomatoes

1 tsp. each Italian seasoning & dried basil

1 pound box shell pasta, or whatever you have on hand

1 cup sour cream

1/3 cup jarred pesto, or more to taste

2-3 thinly slivered green onions

8 oz. cream cheese, cut into chunks

1 cup grated cheese: anything you have, from white cheddar to Asiago or Parmesan or Romano, plus extra for topping casserole

1/2 cup milk, or more if it seems too dry

Directions:

Preheat oven to 350

1. Grease a large casserole dish, approx. 13X9

2. In a medium bowl, stir together the sour cream, pesto and green onions. Set aside.

3. Put salted water on to boil for pasta.

4. In large skillet, add olive oil, then sauté the sausage & ground meat, breaking it up w/ a spoon. Cook till browned, pour off grease, & add the marinara, smushed up stewed or diced tomatoes, Italian seasoning & dried basil. Simmer while pasta cooks.

5. Cook the pasta a few minutes less than you normally would.

6. Drain the pasta, then dump it right back into the pot it cooked in.

7. To the hot pasta, add the chunked cream cheese, then stir in the cheddar, Asiago or Parm, then pesto/sour cream/green onion mixture. Stir well to make sure all the cheese has melted. Add enough milk to moisten.

Assemble:

1. Pour the creamy pasta into the greased pan & spread evenly.

2. Spread marinara meat sauce over all, & bake for 20 minutes.

3. Remove from oven, top w/ additional cheese, and sprinkle on some buttered crumbs if you'd like. Bake an additional 20 minutes till bubbly.

SCRAMBLED EGGS, GREEN CHILE CHEESE CASSEROLE Recipe

Ingredients

1 doz. eggs

1 pt. sour cream

1 (4 oz.) can chopped green chiles

1 lg. grated Longhorn or Cheddar cheese

Directions

1. Beat eggs and then mix in sour cream. Spray 9 x 13 inch or 9 x 14 inch pan with Pam. Put layer of cheese on bottom, layer of green chiles, and pour eggs and sour cream mixture on top. Bake at 350 degrees for 30 minutes
