DECEMBER 2014 RECIPE GAME.......CELEBRATE YOUR WAY

HOW TO PLAY THE GAME:

1. The first player of the month starts the game by posting their choice of recipe. At the end of that post he or she should indicate their choice of "Next Ingredient".

2. Throughout the game, the next poster in line must use the ingredient that the person ahead chose. If you can, highlight the ingredient and/or put it in capital letters anywhere that it is used through out the recipe.

3. Because of time or system delays, some duplicate posts occur to the same ingredient. The next poster generally responds to the first post for that ingredient

Whatever you celebrate this time of the year, please post your favorite recipes, and they might just become a favorite to us in our celebration........Kiss

I know I have posted this before, but it is easy, and makes an impressive presentation...........This is an old Mr Food recipe that I have made several times......Cool

Jingle Bell Torte

1 (18.25-ounce) package chocolate cake mix, prepared according to package directions

1 (10-ounce) jar red maraschino cherries, well drained and chopped, with 1/4 cup juice reserved

1 (8-ounce) package cream cheese, softened

1/2 cup confectioners' sugar

1 (16-ounce) container frozen whipped topping, thawed

1 (6-ounce) jar green maraschino cherries, well drained and chopped

1 cup chopped pecans, with 2 tablespoons reserved for garnish

1 cup semi-sweet chocolate chips

What To Do:

1. Preheat oven to 350 degrees F. Coat 2 (8-inch) round baking pans with cooking spray.

2. Stir reserved cherry juice into chocolate cake batter. Pour into prepared cake pans.

3. Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Let cool 10 minutes, then remove to wire rack to cool completely. When cool, slice cakes horizontally in half, making 4 layers.

4. In a large bowl, beat cream cheese and sugar until smooth. Stir in whipped topping, red and green cherries, and pecans.

5. Place 1 cake layer on platter and evenly spread one-quarter of cream cheese mixture on top. Repeat with remaining cake layers and finish with cream cheese mixture on top. Sprinkle with reserved pecans.

6. In a small microwaveable bowl, melt chocolate chips in microwave 1 minute, stirring until smooth; add 10 seconds, if necessary. Drizzle melted chocolate on cake and refrigerate until ready to serve.

Cherry Brownies

1 package of your favorite brownie mix
1 can prepared chocolate frosting
8oz. cup candied cherries(lightly coated with flour)

Prepare brownies as instructed on package, mix in candied cherries, and pour into prepared pan. When brownies are cool frost and decorate with candied cherries.

Holiday Recipe: Cooked & Creamy Spiced Eggnog

Cooked Eggnog

Serves 6

Ingredients

  • 6 large eggs
  • 3 cups milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt
  • rum or brandy, optional

Directions

  1. Combine sugar and salt in a large bowl. Then add in eggs and mix until completely incorporated.
  2. Heat milk in a large saucepan over medium heat.
  3. Pour sugar and egg mixture into milk and whisk vigorously.
  4. Continue stirring until mixture reaches 155-160º and mixture coats the whisk. About 5 minutes.
  5. Remove from heat and whisk in heavy cream, vanilla extract, nutmeg and cinnamon, and stir well.
    Note: if using alcohol, pour it in at this point.
  6. Pour eggnog into a pitcher and refrigerate for 6-8 hours, or overnight.
  7. Shake before serving and garnish with nutmeg and/or whipped cream.

These cookies are really good. Not as 'bitey' as ginger snaps. Delicious with coffee!

Cinnamon Snaps

½ C sugar
½ C shortening
½ C molasses
1 tsp soda
1 Tbsp warm water
2 ½ - 3 cups all purpose flour
1 Tbsp cinnamon
1 Tbsp ginger
¼ tsp salt

Cream sugar and shortening. Add molasses. Add soda dissolved in 1 Tbsp warm water.

Add enough flour to make a stiff dough.

Bake 8-10 mins at 375 degrees.

For a softer cookie, add 1 beaten egg.

Baked Potato Soup

This is a rich, but great potato soup. The use of some of the potato skins makes it a little different than some other recipes.

4 large potatoes
2/3 c butter
2/3 c flour
1 1/2 quarts of milk
Salt and Pepper
4 green onions
1 c sour cream
2 c crisp-cooked, crumbled bacon
5 oz of grated cheddar cheese

Heat oven to 350 deg F and bake the potatoes until fork tender.

Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended. Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt and pepper and simmer over low heat, stirring constantly.

Cut potatoes in half, scoop out the meat and set aside. Chop half the potato peels and discard the remainder. When milk mixture is very hot, whisk in potato. Add green onion and potato peels. Whisk well, add sour cream and crumbled bacon.

Heat thoroughly. Add cheese a little at a time until it is all melted in.

Macadamia Nut Crusted Mahi Mahi

Ingredients

5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts

1/2 cup panko (Japanese-style bread crumbs)

2 tablespoons all-purpose flour

1/4 cup butter, melted

Vegetable oil, for brushing foil

4 (6 to 8-ounce) mahi mahi fillets

Kosher salt and pepper

2 tablespoons coconut milk

Directions

Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.

Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.

Remove from the oven and allow to stand 10 minutes before serving.

Peppermint Candy Recipe

Ingredients

1 cup semisweet chocolate chips

1 can (14 ounces) sweetened condensed milk, divided

1 cup white baking chips

3 teaspoons peppermint extract

2 to 3 drops green food coloring

Directions

In a small saucepan, melt chocolate chips with 3/4 cup condensed milk over low heat, stirring occasionally. Line an 8-in.-square dish with waxed paper; butter the paper.

Spread half of melted chocolate mixture into pan; chill for 5-10 minutes (let remaining melted chocolate mixture stand at room temperature).

In another saucepan, melt white baking chips. Stir in remaining condensed milk until smooth. Remove from the heat; add extract and food coloring. Refrigerate until set. Spread over chocolate layer; spread with reserved chocolate mixture. Refrigerate until set. Cut into 1-in. pieces.

Best Sugar Cookie Recipe

Soft cut out sugar cookie recipe that keeps its shape and dough does not need to be chilled before baking- perfect edges every time!

Ingredients:

1 Cup granulated white sugar

1 egg

1 Cup (2 sticks) butter, softened

2 tsp vanilla or other flavoring (almond, lemon)

2 teaspoons baking powder

3 cups all purpose flour

Directions:

1.Preheat oven to 350° F.

2.In the bowl of your mixer cream butter and sugar until smooth.

3.Beat in extracts and egg.

4.In a separate bowl combine baking powder with flour and add a little at a time to the wet ingredients. The dough will be very stiff. If it becomes too stiff for your mixer turn out the dough onto a countertop surface. Wet your hands and finish off kneading the dough by hand.

5.DO NOT CHILL THE DOUGH. Divide into workable batches, roll out onto a floured surface and cut. You want these cookies to be on the thicker side (closer to 1/4 inch rather than 1/8).

6.Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.

This dough can be rolled into small balls and flattened with a glass dipped in sugar for plain round cookies. ALSO..they can be flavored half vanilla, half almond or Lemon extract and I'm gonna try Orange with dried cranberries.

I WAS married to a Vermonter, and he did not care for the way we Southerners cooked cabbage to death, but rather preferred that I mince up a couple garlic cloves and add either butter or olive oil to the pan, and "stir fry" cabbage just until crisp/tender, and sprinkle with a favorite vinegar..........Cool

Cranberry Pepper Jelly

Mix equal amounts of cranberry sauce and hot pepper jelly (red).

Spread over a block of cream cheese at room temperature.

Serve with your favorite crackers.

Next ingredient: Panko bread crumbs
