I think one of the great summer treats is homemade ice cream. Here is one of my favorites.
7 oz 70% dark chocolate, coarsely chopped
2 cups heavy cream
1 cup whole milk
3/4 cup sugar
Pinch Kosher salt
1 t vanilla
1-1/2 cups pitted chopped fresh cherries
Combine cream, milk, sugar and salt in a heavy bottom small saucepan. Cook over medium heat whisking occasionally. Just before it comes to a boil remove from heat and poor over chopped chocolate in med bowl. Left sit 5 minutes. Then whisk until completely combined and no more flecks can be seen. Pour into shallow pan or bowl. Stir in chopped cherries. Place in fridge to chill thoroughly - I do overnight.
When mixture is cold stir in vanilla. Pour into ice cream maker and process according to directions. Transfer to container, cover and freeze until ice cream is firm (about four hours).

I could get in trouble with this recipe! Sounds absolutely sinful in the best possible way.
