This side dish is very popular in Minnesota. You can find it on many buffets all year long. I like to make it in Spring and Summer. Goes great with brats, burgers and steak. Also, goes well with fish and chicken, for that matter. You can peel the cukes or not. Good either way.
Cucumber in Cream
1 cucumber, sliced very thin (I use my mandolin to ensure the thickness is even)
Juice from one lemon (can use concentrate)
2 tbsp. low-fat sour cream
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. dried dill or 1 tsp. fresh dill
1/2 tsp. sugar
In a medium-size bowl, combine lemon juice, sour cream, salt, pepper, sugar and dill. Stir in cucumber slices. Cover and chill for 1 hour in refrigerator before serving.
