Sorry I hit Post by accident.

 

I bought cucumber salad at a local deli. It is made with a sugar and vinegar brine. Well, I ate all the cucumbers and I have a lot of the brine left. I was thinking of buying a cucumber, slicing it up and putting it in the left over brine. How long do you think the brine will last?

@jst4janI I think the brine will be fine but it will get watered down because cucumber release a lot of water.

I also save the liquid from sweet pickles and put drained canned sliced beets into it.  The veggie does dilute the pickle juice but the brine will last for a long time.

   I've done that too.

Sliced a cucumber, salt both sides to draw out the liquid, press them dry, and throw in the deli brine.

It didn't last long enough to worry about it going bad.
