This quiche saves the calories from the crust and makes it a wonder vegetable to serve for dinner or as the main dish in a dinner.
1 quiche makes six servings since it isn't thick. Reheats great!
Crustless Spinach Quiche
Preheat oven to 350 degrees
1 Tbls. Oil
1 lg. onion, chopped
1 pkg chopped, frozen spinach, all water squeezed out
I put in a colander and press with a spoon.
5 eggs
¾ lbs Muenster cheese, grated
Salt, pepper
Preheat oven to 350 degrees
Spray pie plate
Heat oil in skillet over med heat
Add onion cook only until clear
Add spinach, cook only until excess moisture is out
Let cool.
Beat eggs in bowl with fork or whisk.
Add cheese, and salt, pepper to taste
Stir onion, spinach mixture in.
Pour into pie plate
Bake 40-45 minutes until lightly brown.

@ECBG This sounds SO good! Thanks! It makes me think of a spinach souffle, which I haven't had in a long time! Wouldn't this be good in those little mini tart shells for a buffet side dish?

@SoonerI think it would do fine. Keep in mind this isn't a high quiche, so you might have to add more to your shells. Our little grandsons love this as do the adults. You could also do in an 8 x 8 or 9 x 9 and serve in squares. Enjoy!

Thanks for the recipe - my ex used to make a crustless quiche I just loved. I'll give this one a try!

@ECBGLooks Great! I just made one very similar to this over the weekend but added a cup of cream to the beaten eggs. Not so good for the calories but Really tasty! The munster cheese is mellow , nice and stringy when warm. Good stuff!

@candys mine,Did your's have a crust? Would you think your addition would have made it soft enough that it would have had to use a crust to hold it together? Thanks!

@ECBGHi, Nope, no crust. It's very fluffy and You're right it didn't hold together well while it was hot but it was fine once it cooled. The recipe called for a nine inch pie plate but I used a ten inch. maybe the bigger area cooked it more so it held together when done. Good Point! Still, it was yummy.

@candys mine,Since chesse is almost a liquid when hot, I'm not surprised.
If you love quiche, you'd probably like the Italian tomato and gruyere deep dish pie I do at Christmas.. It's extremely expensive as you can imagine and everyone is addicted to it. I get the cheese at Sams.
