I'd do a twice baked potato, or scalloped with the white sauce, layered with cheddar.

Am thinking of roasted Brussels sprouts with pecans and maybe some corn I cut from the cobs and froze this Summer for sides. Question: do I need some kind of potato? Would mashed potatoes be too much with the dressing? Oooh, I also have some tremendous Georgia peaches in the freezer -- may have to reconsider dessert. Wouldn't a peach cobbler be delicious on a (hopefully) white Christmas evening?
