If you go the roast route lightly spray crock with non stick spray, place vegetables on bottom of crock with the roast on top. A good tip to thicken gravy- sprinkle in instant mashed potatoes a bit at a time to desired consistency.

I'm sure your dinner will be fabulous for everyone no matter what you decide to fix!

I have often made a rich beef burgundy for Christmas dinner. Everything is in the pot, or I'll do potatoes in another crock pot. Serve with crusty bread... easy and elegant.

Beef stroganov is another crock pot favorite. Noodles & salad with it.
