Crockpot Chicken Parmesan

We love the traditional Chicken Parm, but I like to make easy crockpot meals during the busy holiday time. I always try to remember to save the Parmesan wedge rinds, put in a baggie and freeze it. Going to make this in December

Crockpot Chicken Parmesan

Ingredients

2 pounds chicken breasts 

1 can (28 ounces) crushed tomatoes 

3 tablespoons tomato paste 

2 shallots, chopped 

1/4 cup italian seasoning 

1/2 cup fresh basil leaves

chili flakes

sea salt and black pepper

1-2 parmesan rinds

1 cup grated parmesan 

1 cup shredded whole milk mozzarella or provolone cheese

2  tablespoons salted butter 

1 cup panko breadcrumbs

2 cloves chopped garlic

fresh chopped parsley or basil

1 pound hot cooked spaghetti for serving 

 

Instructions

 
1. In the bowl of your crockpot, add the chicken, tomatoes, tomato paste, shallots, Italian seasoning, basil, and season with chili flakes, salt, and pepper. Add 1/2 cup of water. Stir it. Drop in 1-2 Parmesan rinds. Cover and cook on low for 3-4 hours or on high for 2 hours.
 
2. Crank the heat on the slow cooker to high. Remove the lid, stir, and shred the chicken. Stir in the 1/2 cup parmesan, then top with mozzarella/provolone. Cook for 20 minutes on HIGH, until the cheese is melted.
 
3. Meanwhile, add the butter to a skillet with the Panko and garlic. Cook over medium heat until the butter browns and the panko is toasted. Remove and mix in 1/2 cup Parmesan. Season with salt.
 
4. Serve the sauce, chicken, and cheese over bowls of cooked spaghetti. Top with Parmesan crumbs and fresh basil.

@wagirl  You put the raw boneless skinless chicken breasts into the crock pot to cook with the tomato sauce. The chicken cooks in the crock pot, then you shred it

Looks like a good recipe but I could never put all of those ingredients together in only 10 minutes unless they were pre-measured, pre-chopped/shredded, etc. and just sitting out ready to dump into the slow cooker.

@Calibeach.  Sounds really good but too many ingredients, too much trouble for me.  Thanks for posting though.

@Kachina624 as a short cut, you can use jarred pasta sauce and skip the bread crumb toppings

Sounds great. It's not that many ingredients as some have said. I never cook with garlic because the smell is so strong.

You could also put it together ahead of time and stick in fridge.  I used to do that with different recipes before I retired...
