We probably make this several times a month because it's quick to prepare, easy and good!   We sometimes add mushrooms if we have them.

 

Slow Cooker Beef Stroganoff I   (From allrecipes.com)

  • 1 pound cubed beef stew meat 
  • 1 (10.75 ounce) can condensed golden mushroom soup
  • 1/2 cup chopped onion
  •  1 tablespoon Worcestershire sauce
  • 1/4 cup water
  • 4 ounces cream cheese

Directions

 

  1. In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
  2. Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.
  3. Serve over hot, cooked noodles or rice.

                                       Root Beer Pulled Pork

 

3 lb. boneless pork roast, rubbed with seasonings of choice (I used a brown sugar and spice barbecue rub) or you can use country style spareribs

bottle of root beer (need about 5 cups)

1 large spanish onion, sliced

 

 

Brown pork roast and onions, place both in crock pot.  Pour root beer to almost cover roast.  Cook on low 6 - 8 hours or until meat can be pulled apart with two forks.  Drain all but about 1/2 cup of cooking juices.  After meat is shredded, add barbecue sauce (I use Sweet Baby Ray's) to meat along with some of the cooking juices.  Serve.

I love this Chicken a la King.  I serve it over rice, but it's also good over noodles.

1 (10 3/4 oz.) can cream of chicken soup (undiluted)*
3 Tbsp. all-purpose flour
1/4 tsp. pepper
dash of cayenne pepper
1 lb. boneless, skinless chicken breasts, cut into cubes
1 celery rib, chopped
1/2 cup chopped green pepper (I use frozen)
1/4 cup chopped onion
1 (10 oz.) pkg. frozen peas, thawed
2 Tbsp. diced pimentos, drained
hot cooked rice
 
Combine the first four ingredients in a crock-pot until smooth.  Stir in the chicken, celery, green pepper and onion.  Cover and cook on low for 7 1/2 hours.  Stir in peas and pimentos.  Cook 30 minutes longer until heated through.  Serve over rice.

*If using 98% fat-free soup, add one teaspoon of salt to the mixture.

Golden Pork with Cinnamon-Sugar Apples

 

1 pork loin roast (about 3 pounds)

1 can Golden Mushroom Soup, undiluted

1/2 cup water

1/4 cup packed brown sugar

2 tablespoons soy sauce

1/4 cup sugar

3 tablespoons cinnamon

2 Granny Smith apples, cored and sliced

 

Place pork in crock pot.  Combine soup, water, brown sugar and soy sauce; mix well.  Pour over pork.  Cover and cook on Low for 8 hours.

 

About one hour before serving, combine sugar and cinnamon in resealable plastic food storage bag.  Add apples and shake to coat.  Place apples on pork.  Cover and cook one hour longer.

 

Serve with rice or noodles.

I like to make Sweet & Sour Meatballs in the Crock Pot, OH I mist as well admit it, I like a whole lot of recipes in the crock pot!

Beef cubes w/ onion & potatoes (sometimes carrots).

I just season how I like: S&P, bay leaves, apple pie spice, sherry & beef stock, maybe a touch of balsamic vinegar.

A family favorite... Happy Holidays!
Mediterranean Pot Roast
1 boneless beef chuck roast (3 lb)
1 teaspoon salt
1 tablespoon Italian seasoning
1 large clove garlic, finely chopped
1/3 cup sun-dried tomatoes in oil, drained and chopped
1/2 cup sliced pitted Kalamata or ripe olives
1/2 cup beef broth
1/2 cup frozen small whole onions (from 1 lb bag)
Directions:
Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet about 5 minutes, turning once, until brown. Sprinkle with salt, Italian seasoning and garlic; remove from skillet.
Place beef, seasoned side up, in 4-to 5-quart slow cooker, sprayed with cooking spray. Spread tomatoes and olives over beef. Add broth and onions.
Cover and cook on low heat setting 8 to 10 hours or until beef is tender.
Remove beef from slow cooker; cover and let stand 15 minutes. Slice beef; serve with beef juice and onions from slow cooker.
