Crock Pot Lemon Garlic Butter Chicken

I found this recipe on Pinterest...from eatwell101....thank you to her......easy and very good!  I did not add the red pepper flakes and did add a little more chicken broth because I had a few more chicken thighs.

 

CROCK POT LEMON GARLIC BUTTER CHICKEN

 

6-8 boneless chicken thighs, skinless or with skin

salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 tsp crushed red chili pepper flakes or cayenne (opt.)

1/2 teaspoon paprika

4 garlic cloves, sliced or minced

1 teaspoon Italian seasoning

1/2 stick butter, diced

zest of half a lemon

juice of one lemon

1/3 cup low sodium chicken broth

chopped fresh parsley and lemon slices for garnish

 

Place chicken thighs in the slow cooker.  Combine the chicken broth, lemon juice and lemon zest....pour over chicken thighs.  In another bowl, combine Italian seasoning, onion powder, garlic powder, paprika, crushed red chili pepper flakes, salt and pepper.  Sprinkle the spice mix over the chicken thighs.  Top with fresh minced garlic and diced butter.

 

Cover and cook on HIGH 3-4 hours or LOW 6-8 hours.

 

If desired, sprinkle with parsley and garnish with lemon slices.  Good served with rice, pasta, quinoa, etc.

Oh yummy! Copying this. I am always looking for a new crockpot recipe. Thank you. I will try this with chicken breasts. I don't care for thighs.

This sounds delicious but could I use chicken breasts instead of thighs?

 

If so, would I need to adjust the time or anything?

Re....??..... thighs vs. breasts?  I only tried thighs but I think using breasts will be fine as well.  Some breasts seem to be large these days so maybe cook longer (?).  I would definitely try breasts as well.  

 

Type of broth?.....I don't think it matters...I used a low-sodium Swanson Broth.
