I very much remember my Grandmother making a cookie around the holidays that had rice krispies and dates in them. I remember that she didn't have to bake them. After not finding the recipe in her cookbooks, I went on a search and this is what I came up with. I am pretty sure this is exactly what she made.
Crispy Skillet Cookies
1/2 cup butter
1 cup sugar
1 cup chopped dates
1 egg, beaten
1 tsp vanilla
2-1/4 cups rice krispies cereal
powdered sugar
In a large saucepan melt butter. Remove from heat and add the sugar and chopped dates. Return to heat and continue cooking, stirring constantly for 4 minutes. Add egg and continue cooking until ingredients are all melted together. Add vanilla and rice krispies; remove from heat. Stir until combined.
Drop mixture by teaspoonfuls into powdered sugar. Shape into balls.
Store covered in refrigerator.
