Clean and peel potato (You can leave skin on if you like)
Slice as thin as possible. I use a mandolin.
Rinse and soak in cold water - about 10 minutes
Drain and dry with dish cloth or paper towels
Put a layer or two of parchment paper or paper towels on a microwave safe plate (I have been using parchment)
Sprinkle a bit of salt on chips and single layer on plate - they shouldn't touch
Cover with another piece of parchment or paper towels (in my microwave I have to put a paper plate upside down on the top parchment to keep it from blowing off)
Microwave on high for 4-6 minutes
Don't leave. Some chips brown faster than others. After 3 or 4 minutes check.
Remove as they brown and put on rack or paper towels to cool.
This takes a bit of time because they have to be done in batches, but so worth it if you have a taste for chips and are watching fat calories and salt intake.
There are many other variations on the Internet and YouTube. This one is working for me.
