This recipe was on Alton Brown's show, an original Creole Sauce recipe made by Paulette Nichols of Martinque Island. Her mom had made it since her childhood. Wonderful flavor. She served it over dried fish for breakfast, but I put chicken breasts in it, pre cooked.
Brown 1 chopped garlic clove, 1 chopped green pepper, and 1 onion chopped in vegetable oil. Add 4 fresh tomatoes crushed, 2 cans tomato paste, 1 T raw or brown sugar, 1 T soy sauce, 2 T red cider vinegar. 1/2 teaspoon salt and 1/2 teaspoon pepper, 1 quart hot water, some fresh thyme last. Simmer until half quantity. I browned chicken breasts first with the lid on, then drained and wiped out the pan. Added chicken breasts back to the sauce while it was reducing. Delicious!
