This is my go to recipe for creme brulee (not that I make it often). It is nice if you are having people over and want something impressive. You can top with some fresh berries as well.
Creme Brulee
3/4 c. sugar
3 cups whipping cream
7 egg yolks, lightly beaten
2 t. vanilla
1/2 sugar for sprinkling (can use brown sugar as well)
Combine 3/4 c. sugar and whipping cream in a heavy saucepan; cook over medium heat, stirring constantly, until sugar melts and mixture comes to a simmer (do not boil). Remove from heat.
Combine egg yolks and vanilla in a small bowl. Gradually stir about one-fourth of the hot whipping cream mixture into yolk mixture; all to remaining whipping cream, stirring constantly.
Pour custard mixture evenly into eight 4 oz. ramekins. Place in a 9x13 pan; all hor water to pan about half way up sides of ramekins. Bake at 350 for 35 minutes. Remove ramekins from water; cool slightly on wire rack.
Sprinkle with sugar evenly over custards. Broil 3 minutes or until sugar melts. Cool to allow sugar to harden.
