Creamy Chicken Over Stuffing

Several days ago my husband went to Costco. And guess what -  he came home with a Rotisserie Chicken. So my son had a b r e a s t for lunch, my husband made a chicken sandwich with half of the other one and I had a drum stick.

And the rest of the chicken sat untouched. So tonight I decided to pick all the meat off the chicken and hunt for a recipe. Not sure how I happened to end up on the Campbell's website. But I saw a recipe and I happened to have all the ingredients. (Well except for Pepperidge Farm stuffing but I had Stove Top Chicken Stuffing)

I found this very simple but tasty recipe. I even was told twice that they liked it. That is something. So if you want an easy recipe here it is - 

 

 

Ingredients

  • 1 1/4 pound boneless, skinless chicken breast (4 small or 2 large cut in half lengthwise for thinner pieces)
  • 3 tablespoons butter (amount divided in recipe steps below)
  • 1 cup Swanson® Unsalted Chicken Broth
  • 6 ounces (about 3 cups) dry Pepperidge Farm® Herb Seasoned Stuffing
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Chicken Soup or 98% Fat Free Cream of Chicken Soup
  • 1/2 cup milk
  • 1/2 cup shredded white Cheddar cheese or mozzarella cheese


    Instructions

  • Step 1

    Season the chicken with salt and pepper.  Heat 1 tablespoon butter in a 12-inch nonstick skillet over medium-high heat. Add the chicken and cook for 15 minutes or until well browned on both sides and done (to prevent sticking- make sure the skillet and butter are hot before adding the chicken). Remove the chicken from the skillet.

  • Step 2

    Heat the remaining 2 tablespoons butter and the broth in the skillet to a boil.  Add the stuffing and mix lightly until it’s just moistened.

  • Step 3

    Reduce the heat to medium-low.  Place the chicken on the stuffing. Stir the soup and milk in a small bowl. Pour the soup mixture over the chicken. Top with the cheese. Cover and cook until the soup mixture is hot and the cheese is melted.

Sounds good. You found a perfect recipe for leftover chicken. We had chicken in sauce tonight with cheesy hashbrowns.

I buy those chickens all the time.  I make chicken salad with some of it, I've made chicken burritos, chicken and avacado sandwiches, then I take off the meat and simmer the carcass to get broth and then make creamy chicken noodle soup.  I get several meals out of one chicken.  Very budget friendly.

I tried one with stuffing but did not care for mine.  Too salty tasting for me.  I try different ones all the time.  Some are hits but fun to try a new recipe.

This sounds so good.  It would be good over rice or some mashed potatoes too.

 

A few years ago, I had a Costco membership and I'd always buy two rotisserie chickens.  I'd come home and pick off the meat and freeze it to use in soups or casseroles later.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

I made mashed potatoes.

 

We had stopped buying the Costco chickens for several years. They looked undercooked to us. And my husband isn't one to be bothered by pink meat. But the one we bought (years ago) we cooked in the oven for almost half an hour.

 

This one looked cooked through and through. So will probably be buying them more regularly.

@drizzellla   That sounds quick and easy.

 

Here's another recipe for leftover chicken.  I used to make this all of the time when my children were younger and had all types of sport practices after school and I had to get dinner on the table quickly.

 

The Bisquick makes a crust on top. No rolling out pie dough.
