Cream Cheese Drop Cookies! DELISH!!!

I am by no means an expert baker, but do enjoy baking especially during the Christmas season. It seems like every year I make the same cookies and while they are good, I wanted to try something different.

 

 My mom passed away three years ago and I was given a huge box of recipes all written on loose cards, paper and such and while I have gone through many of them the amount of the paper was so much that I never got through all of them. It has always been heartwearming to see her handwriting on these papers, but some were a different handwriting, so I assume came from the author of the recipe sharer.

 

 Last week I was going through the "box" and came across a recipe titled Cream Cheese Drop Cookies! DELISH!!!, thus the title of my post. I decided to make this cookie and can I just say from the first bite, I knew I had found a new favorite cookie to add to my collection. My family has been talking about these cookies since I first made them and the friends that I shared with all wanted the recipe that day. I hope you enjoy also and if too tired to add another cookie to your kitchen right now, hang on to the recipe and try later.

 

BTW even though I made 3 batches, I will be making more tomorrow as the others are all gone after sharing with family and friends.

 

 

Cream Cheese Drop Cookies

 

1 cup ( 2 sticks) butter, softened


3 oz. cream cheese softened


1 1/4 cups sugar


1 egg yolk


1 tsp. pure vanilla extract


1 tsp. pure rum extract


1/2 tsp. butter extract (also called flavoring)


1 generous Tablespoon Bailey's Irish Cream


2 1/2 cups flour, plus 1 tablespoon


1/2 tsp. salt.

 

 

Heat oven to 350 degrees.

 

Cream together butter and cream cheese; add sugar and cream really well.
About 5 minutes. Mixture should be very light.

Beat in egg yolk and then stir in flavorings

On low speed, gradually add flour and salt. and mix well.
Drop by heaping teaspoons onto cookie sheet. I use parchment paper on pans to keep cookies from sticking.

If desired, sprinkle with colored sugars. I didn't do this.

Bake 8 1/2 minutes or until bottom edges are very lightly browned.

Let cookies rest on pan about 2 minutes then remove to wire rack to cool.

ps. do not overbake these, bottoms should only be a light golden brown;

These do look really good. Thanks for sharing the recipe and the story. It is neat when we find these treasures from the past. Hey maybe your mom guided you to that recipe as a Christmas gift.

This recipe looks really yummy! I know that my DH would enjoy these, as he likes anything that has cream cheese in it. I love anything baked with cream cheese, too. Yum! Heart

thank you, my mom use to make these and she too passed away but I couldn't find that recipe so, thank you for posting yours.

This sounds very similar to hers but I know she didn't put Bailey's Irish Cream in hers but I will add that, sounds great.

Thank you for sharing your Mother's Recipe.I lost my Mother at the age 42., So I didn't get any of her Recipes. I try to cook from memory. I will have to try this Recipe.
