Can't wait until cranberries are in season again!

 

 

Cranberry Upside Down Cake

 

1 box of yellow cake mix

4-5 cups or raw cranberries

2 ½ cups white sugar

1 cup brown sugar

1 stick butter

1 cup walnut halves or pieces

 

Preheat oven to 350°.

 

Slice the stick of butter in thin pieces. Distribute the pieces evenly over the bottom of a 9x12-inch pan, or a large round one. Sprinkle the walnuts over the butter.

 

Wash & dry the cranberries, and pour them over the nuts. Combine the two sugars, and spread evenly over the cranberries. Mix the cranberries & sugar slightly.

 

Follow the directions on the box to prepare the yellow cake mixture, and pour it over everything.

 

Bake at 350° for 40 – 50 minutes, or until a toothpick inserted in the center comes out clean.

 

Let cool 10 minutes. Then, with a knife, loosen the cake from the edges of the pan, and turn the pan over on a plate. Serve with whipped cream or vanilla ice cream.

Boy, that's a lot of sugar.  I guess it's because cranberries are sour.

I was thinking the same thing. I never use that much sugar in baking. Especially if using a box cake mix, which tends to be sweet to begin with. I would definitely cut down the sugar myself, but I posted the recipe as I found it.

That sounds wonderful!  I am a cranberry freak!

 

Do you suppose that Splenda could be substitutefor the white sugar?  I would love to make this but DH is diabetic.

I love cranberries and can't wait to try this. Ques. about the amount of sugar.....I am type 2 Diabetic diet controlled for several years. I would love to keep it that way. Any suggestions on how much sugar to use if I didn't want to use what recipe calls for. I certainly will try this. I might also try adding some orange zest. I love the taste of cranberries and orange. Thanks so much for sharing your recipe.
