When our kids were growing up, this was known (and still is!) as Auntie Diane's Chicken because--my SIL gave me the recipe! Whatever it is called, I know you'll call it delicious!!

1/2 - 3/4 c. margarine ( butter substitute spreads are fine, too)

fresh white or whole wheat bread crumbs ( 2 slices, in food processor)

1/4 c. grated Parmesan cheese

2 tsp. basil

2 tsp. oregano

1 tsp. garlic powder

1 pkg. boneless, skinless chicken breasts

1/2 c. apple juice

Preheat oven to 375*. Pound chicken breasts, or if thick, slice each through the center lengthwise to create two pieces.

Melt margarine in saucepan. Combine bread crumbs, parmesan cheese and spices in a large dish or bowl. Dip chicken in margarine, then roll in crumbs to coat. Bake in baking pan for 30 min.

Add apple juice to remaining melted margarine in saucepen. When chicken is golden brown, pour butter sauce mixture around and over chicken. Return to oven for 5 min. or until sauce is hot.

*One caution--warm the butter and apple juice mixture a little, and cool the hot baking dish a few minutes, before adding the mixture to it, especially if using ceramic (I broke my beautiful Polish Stoneware dish, not realizing this!)
