Could potato salad be dressed with something as simple as egg yolks & sweet relish?

My favorite potatoe salad is from Rudy's BBQ in San Antonio, TX. I am on to year two of trying to replicate it. I can't find a knock off recipe on-line.

I just "dissected it." It has potatoes, finely shopped red peppers, peper, and a creamy pale yellow dressing that tastes like a mild gourmet sweet relish and egg yolks. I am sure there is salt in it.

Do you think it could be that simple a dressing? Just egg yolks & sweet pickle relish?
