I'm thinking of using chocolate chips in place of nuts or raisins...
Cottage Cheese Cookies
2 cups softened butter
1 1/2 cups brown sugar, packed
2 cups sugar
4 eggs, beaten
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. saltl
4 tsp. vanilla (yes, FOUR)
2 cups small curd cottage cheese (1 lb.)
1 cup chopped nuts OR raisins
1 cup cocoa powder
5 1/2 cups flour
About 1 cup confectioners sugar for rolling dough balls
In a large mixing bowl, combine the butter with the sugars. Beat until light and fluffy.
Add the eggs, mixing well after each.
Mix in the baking soda, baking powder, and salt; stir until completely mixed in.
Pour in the vanilla; mix in.
Stir in the cottage cheese, mixing until thoroughly incorporated.
Mix in the nuts or raisins.
Gradually add the cocoa powder, mixing after each addition. Do the same with the flour.
Cover bowl with plastic wrap and chill overnight.
Preheat oven to 350, grease cookie sheets.
Roll dough into 1" balls, roll in powdered sugar, and place on the cookie sheets, pressing down slightly.
Bake cookies at 350 for about 10 minutes. Cool on cookie sheet for 2 minutes, then remove to wire rack to cool completely.
Makes about 12 dozen cookies.
