Bought two cornish hens after not even thinking about such a food for years.
Mine are frozen. Does anyone here work with these mini-chickens, and if so, what do you do with them, other than turning on an oven and putting them in to roast?
Maybe I don't even want to buy them ever again. Do you all think they're good?

I love them! But as you said, I just season and bake them.
Sometimes I glaze them using an orange marmalade type glaze.

They're delicious. Just don't over cook them and dry them out. I stuff them like I do a turkey. Stuffed and basted with butter and white wine would be delicious.
325 will give you more moisture than 350.

We love them! perfect size for us.
I put onions or citrus in cavity. Dry rub seasoning, roast then a few of minutes of air fryer for a bit of crispness.

I bought them a few years ago and put them in the oven to roast. Would never buy them again, we didn't like them at all.

Thanks to all who wrote with some useful comments.
LIke the idea of splitting them and the other idea of stuffing them.
(As you might already notice and like many of you, I'm having to cook way too much during this COVID thing and am reaching out for opinions and help! LOL!!)

You could also brush them with apricot preserves about 20 min before serving. I'd add a little preserves with the stuffing and white wine.

We have these regularly. We stuff them with our favourite rice and oven roast at 350 degrees for an hour. Depending on size, check roast time. One of my favourite easy meals.
