Corn Muffin Crust Hamburger Pie

1 pound ground beef

1/4 cup onion...chopped

1/4 cup catsup

1 teaspoon salt

1/2 teaspoon chili powder

1/4 teaspoon oregano

1 can (12 ounces) whole kernel corn...drained

1 package (8 ounces) corn muffin mix

1 tablespoon butter...melted

1 can (16 ounces) diced tomatoes...drained, but reserve juice

1 tablespoon brown sugar

2 teaspoons cornstarch

1 teaspoon Worcestershire sauce

2 tablespoons parsley...chopped

Brown beef and onion...drain. Add catsup, salt, chili powder and oregano. Line meat mixture in a 9 inch pie pan. Pour corn into the middle of the meat shell. Prepare corn muffin mix as directed on box, adding melted butter. Spread evenly over meat and corn. Bake at 425* for about 25 minutes. Invert onto a serving plate. Drain tomatoes reserving juice. Combine juice with sugar, cornstarch and Worcestershire sauce. Cook stirring constantly til thick and translucent. Add diced tomatoes. Heat and serve over meat. Garnish with parsley.
