Every time I make this, people gobble it up. :-)
3 (11 oz.) cans corn (or frozen and thawed corn)
1 (4 oz.) can diced green chiles, drained
1 bunch green onions, chopped
1/2 C. cilantro
1 red bell pepper, chopped
16 oz. sour cream
8-10 oz. shredded cheddar cheese
1 jalapeno, chopped (optional)
Cumin and chili powder to taste
Mix all ingredients in a large bowl and serve with tortilla chips.
Sometimes I add a few squirts of lime juice too. It's really easy to adjust this recipe. Many times I don't have the canned green chiles, and it's fine without it, as long as you have the fresh bell pepper.
