what white wine do you use for cooking.....making a chicken recipe that calls for white wine...

Extra dry vermouth instead of white wine for cooking. It's shelf stable and I do not dink wine very often. I buy the small 4-pack of bottles for red wine cooking.

@nana59  If you drink white wine, use that.  I prefer a white merlot, so I cook with that.  Since I am the only wine drinker in the house, I get the small bottles.

The next time that I hear salt and ice together, it better be in a margarita!

That's a good idea, @queendiva .  I hate to open a bottle of wine when a small amount is needed in a recipe.  The small botttles would be perfect.  I can easily drink whatever is left over.

I use Sauvignon Blanc.  Dry vermouth is a shelf-stable substitute.

@nana59  I buy the 4-pack of Chardonnay. That way you won't have to waste a large bottle. And, as they say, only use a wine you would drink.

 I use dry  clean crisp white wine  such as Sauvignon Blanc. Alot of Chardonnay's can be sweet, find a dry one . You can't go wrong with one from New Zealand, Spain , Italy or some parts of Northern Va .
