Peanut Butter Kiss Cookies

2 cups Bisquick baking mix

3/4 to 1 cup creamy peanut butter

1 lg. egg

1 tsp. vanilla extract

14- ounce can Sweetened condensed milk ( Not Evaporated) 

1 bag Hershey's kiss candies

Mix all ingredients except kiss candies. Mix well. Chill dough for 1 hr. 

Preheat oven to 350. Shape dough into 1- inch balls and place 2- inches

apart on cookie sheet. Bake 6-8 min. ( Do Not Overbake ) Immediately

after taking cookies from oven, place a kiss into the center of each cookie.

My husband’s grandmother gave me a recipe for macaroons that are easy and delicious. While it wasn’t a consideration at the time, I suppose they’re also gluten free. Here’s the recipe for Nana’s Macaroons:

 

2 egg whites (separate while cold then allow to come to room temperature)

dash salt

1/2 tsp. pure vanilla extract

2/3 cup granulated sugar 

1 1/3 cup flaked coconut

 

Beat the egg whites with the salt and vanilla until soft peaks form.

Gradually add the sugar, beating until stiff peaks form.

Carefully fold in the flaked coconut.

Drop by spoonfuls onto a greased cookie sheet (I recommend using a SilPat liner).

Bake at 325 for 20 minutes.

 

These cookies are fragile and will only hold for 4 or 5 days.

Recipe can be doubled, but anything more than a double batch won’t work because the meringue will go flat before you finish baking the whole batch.
