Does anyone have a recipe for a cookie - probably a gourmet cookie that has a filling? I am not talking about a woopie and not looking for a specific cookie.

 

I have seen photos of cookies that when broken in half have a delicious filling inside.  The photos do not have a recipe attached, they are from a company that is trying to sell their cookies on line.  I went back to try and find the company and cannot.

 

If you have a tried a true recipe would you mind posting or giving me an idea where to search for a recipe.

I don't have a recipe for that. We always make oatmeal chocolate chip walnut cookies.

If you Google cookies with filling & click on images you can find some recipes.

Click on one that looks like something you would like.

I'd just use a wafer recipe and make a stiff buttercream icing to use as the filler.

@Mom2Dogs these werent easy but they were delicious, made them about 7 years ago

I like Linzer cookies with raspberry or even strawberry filling. I don't have the recipe though.

Easier Linzer Jam Cookies

 

  • 1/3 cup sliced almonds, toasted
  • pouch (1 lb 1.5 oz) sugar cookie mix (Pillsbury is best)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup butter, softened
  • egg
  • 1/2 cup apricot, plum or seedless raspberry jam
  • Heat oven to 350°F. In food processor, place almonds. Cover; process until almonds are finely ground. In medium bowl, mix almonds, cookie mix, cinnamon and nutmeg. Add butter and egg; stir until stiff dough forms. Divide dough in half (refrigerate half until ready to use). On floured surface, roll out other half of dough to 1/4-inch thickness. Cut with 2 1/2-inch round fluted cookie cutter. On ungreased cookie sheet, place cutouts 2 inches apart.

    Bake 10 to 12 minutes. Cool 5 minutes; remove from cookie sheet. Cool on cooling rack. On floured surface, roll out remaining dough to 1/4-inch thickness. Cut with the same fluted cookie cutter. With 1-inch round fluted cookie cutter, cut out center of each cookie. On cookie sheet, place cutouts 2 inches apart. Bake 12 to 15 minutes. Cool 5 minutes; remove from cookie sheet. Cool on cooling rack. Spread about 1 1/2 teaspoons jam on bottom of each whole cookie; top each with cutout cookie.  Dust with some powdered sugar

I make a recipe for "Magic in the Middle" cookies from the King Arthur's Flour website:

 

Cookie Dough:

1/2 cup softened butter

1/4 cup creamy peanut butter

1/2 cup sugar

1/2 cup brown sugar

1/2 tsp baking soda

1/4 tsp salt

1 tsp vanilla

1 egg

1 egg yolk

1 1/2 cups flour

1/2 cup cocoa

 

Filling:

3/4 cup peanut butter

3/4 cup powdered sugar

 

Beat butter, 1/4 cup peanut butter, sugars, baking soda, and salt in bowl with electric mixer until fluffy.  Mix in vanilla, egg, and yolk.  Mix in flour and cocoa.

In separate bowl, mix 3/4 cup peanut butter and powdered sugar until smooth.

 

Flatten 2 tbsp cookie dough into1-inch thick disc.  Place heaping tsp of filling on middle of disc.  Pinch dough up and around to enclose filling.  Roll between palms to form a smooth ball.   Roll ball in small dish of white sugar.  Place cookies on parchment-lined baking sheet 2 inches apart.

 

Flatten each cookie to 1/2-inch thick with bottom of greased flat-bottomed glass.

Bake at 375 degrees until lightly set, 7-9 minutes.  Let cool a few minutes before moving to wire rack to finish cooling

I don't know where my recipe is, I haven't made them in forever, but try looking up Kolachky recipes.  The dough is very tender and they can have an assortment of fillings - peach, apricot, date, poppyseed, raspberry, etc., then dusted with confectioners sugar.
