I have found that if I don't freeze my cookies they taste stale after a couple of days. I think many of them actually taste better after freezing and thawing out.

It grew to that many over the years.  I make the "fan favorites" and then one or two that are my favorites and then maybe 1 or 2 new ones that seemed interesting.

 

Baking them off (and decorating some of them) is the easy part.  Not a lot of cleanup in that stage.
