@Mom2Dogs My significant other is also a purloiner of cookies and candies. I have gotten very creative at hiding the tins and lock and lock containers.
He is a keeper though. He cleaned all the hardwood floors in the housethe other day without being asked. Love him for things like that.
The sweets grab was much more annoying when I was working. Now retired I can take my time and not have to do a marathon baking event to replenish the goodies.

They just vanish into thin air around here if they are baked early. No idea how to actually store or freeze. Mama seemed to complain about about the same problem. Must run in the family.

When I was growing up, Cookies were baked starting right after Thanksgiving starting with the ones that had spirits in them and had to cure a few weeks.
They were baked right up until Christmas week. I have my mother's cookie recipes and there are over 30 varieties that were made every year. She also made candy, fruit cakes and Italian pastry-like cookies that were fried dough dipped in honey.
The cookies were stored in an unheated room until Christmas in large tins with waxed paper between the layers. We had a chest freezer, but cookies were never frozen and they always tasted fresh on Christmas Day and beyond. I don't freeze my cookies either unless I plan on keeping them for months.
Many of my friends who were also Italian had homemade cookies in tins in their pantry all year around. We used to grab a cookie or two, especially when visiting someone's Nonna. No one froze cookies and they never went bad..

I don’t usually make any treats for us, but trucker daughter asked for fantasy fudge last week. She took 6 pieces with her, and the rest was given away.
My mom made us an applesauce cake for Christmas, which I don’t like having around either. I sliced it, wrapped 3 pieces together and put the wrapped slices in the freezer. I still have most of last years cake in the freezer.

I made anise cookies today. I froze them last year when I made them and they come out fine. I've never had a problem freezing cookies. I didn't put a glaze on them this time because my husband is diabetic. I just dusted them with powdered sugar and I like them even better.

@Carmie....are pizzelle's an Italian cookie? My neighbor always made anise flavored pizzelles at Christmas, they were so good. They moved away and while we still do see them on occasion, just not at the holiday.

@Mom2Dogs Yes, they are an Italian cookie. My family always made vanilla and anise flavored.
i always hated them. I know, I am the only one. My sister still makes them.

When I used to make 8-10 varieties of cookies each year, I made all the dough in advance and froze it in 2-4 portions, depending on whether I made a single or double recipe. Then I defrost and bake them as I need them.
I have 8 cookie sheets, so I can constantly bake while sheets are cooling.

@VaBelle35...your method is similar to mine, but I do not make that many different types of cookies anymore.
