Very simple, kid & adult friendly, and very satisfying. This recipe is from my Brooklyn-born Mother (1923-2005).

Cut your favorite hot dog(s) lengthwise, spread 1/4" to 1/2" mashed potatoes (flavored or plain) on top, place sliced cheese of your choice (American slices, pepper jack, provolone, Swiss, or any cheese that melts easily and you and your kids like to eat) on top. Place in a preheated 350 degree regular or toaster oven. bake 12-15 minutes until the dogs are hot and the cheese is melted.
