What is your favorite easy cold Chicken or Tuna Salad?

Mine is really basic, just enough mayo to very lightly coat the chicken, celery, salt, pepper, fresh tarragon and roasted red peppers.

1 16 oz box of Rotini

4 cups cubed cooked chicken

1 20 oz. can pinapple tidbits or chunks

3/4 cup thinly sliced green onions

1 cup seedless red grapes

1 cup seedless green grapes

1 cup ranch dressing

3/4 cup mayo

2 cups salted cashews

 

cook pasta according to package.

in large bowl compine chicken, pineapple, celery, onion and grapes.

 

drain pasta, rinse in cold water and stir into chicken mixture.

 

whisk together ranch dressing and mayo. pour over salad. toss to coat. cover and refrigerate at least one hour.

 

add cashews just before serving.

A fun way to serve chicken salad (whatever your favorite version is ) is to cook some jumbo shells, rinse them and let cool, then stuff them with the chicken salad.  Serve on a lettuce leaf and sprinkle with paprika.  

 

I like my chicken salad with candied pecans ( Emerald Pecan Pie flavored pecans, if you can find them ) If you do this, you could also sprinkle ground pecans on top.

For chicken I add salt, pepper, miracle whip, celery, a little onion, halved red grapes and salted cashews. Grapes and cashews give it sweet-salty taste.

If I don't have celery in the house I use celery seed.

Mine was following the directions on the packet of Swanson's Chicken Salad Seasoning mix. That produced my Holy Grail of chicken salads, so of course, it was discontinued. I have one lone packet left, which I won't use. I keep hoping to find a replacement, but no such luck.

 

I do like the chicken salad at Subway, though. Woman Wink

I like my chicken salad simple.  Hellmans's mayo to lightly dress, very finely chopped celery, salt and pepper.  That's it!  Lately though I've been mixing in some mashed avocado or guacamole.  So good.

I use rotisserie chicken shredded, Best Foods mayo mixed with a splash of white wine or champagne vinegar, chopped celery, sliced green onion, chopped fresh tarragon and of course salt and pepper to taste.  Good for sandwiches and with crackers.

 

If I am going to use it as a salad I add red seedless grapes cut in half and candied nuts (pecans or walnuts).

So simple, but, so delicious...  I have been making this for 40 years!

 

PINEAPPLE CHICKEN SALAD... robin

4 cooked chicken breast or Rotisserie Chicken
4 -5 celery sticks chopped
can pineapple tidbits, drained
salt and pepper to taste
Mayonnaise - around 3/4 cup
add until desired consistency

Refrigerate several hours before serving

Serve in Hawaiian bread bowl/ or Hawaiian rolls for sandwiches
