Coffee cookies with Mocha frosting

This is my mom's recipe and just delicious!  I could eat them fresh or even frozen.  You can add nuts and/or raisins or not, they are good either way - a soft cookie.   I usually make a double batch and freeze 1/2 for later.

 

Coffee cookies

 

1.5 cup brown sugar

1 cup soft butter

3 eggs

1 teaspoon baking soda

4 tablespoons hot strong coffee

2.5 cup flour

1 teaspoon cinnamon

1/2 teaspoon cloves

1/2 teaspoon allspice

1/2 teaspoon salt

1 cup chopped nuts (optional)

1 cup raisins (optional)

 

Cream butter and brown sugar.  Add eggs, one at a time beating after each.  Dissolve baking soda in hot coffee (OK to make coffee with instant coffee/I use one tablespoon instant to 4 tablespoon hot water).

 

Add soda/coffee mixture to butter/sugar mixture.  Beat well.

 

Sift, measure, and mix dry ingredients.  Add to coffee mixture gradually.  Add nuts and raisins. 

 

Bake at 375 for 10 minutes.  Frost with mocha frosting when cool. 

 

Mocha-Chocolate Frosting (will make enough to frost a 9" cake)

 

6 Tablespoons cocoa

6 Tablespoons hot coffee

6 Tablespoons soft butter or margarine

1 teaspoon vanilla

3 cups sifted powdered sugar

 

Combine.cocoa and coffee, add butter and vanilla and beat until smooth.  Add sugar gradually until of spreading consistency

@CAcableGirl2 , I must say that those cookies sound divine!  Thank you for sharing the recipe.  I think I will print out your mom's recipe and bake those cookies for my family next week.

@CAcableGirl2 Thanks so much for sharing the recipe.  I'm not the greatest baker in the world so I have a question. 

 

When you put them on the cookie sheet....each cookie is 1 tbsp of dough? Or more?

Like everyone else, I appreciate you sharing your moms recipie. They sound delicious and I am excited to make them. But if you're going to send some to @on the bay , you might as well send some my way, too (ha ha)!

@cindyNC  Yes, that should be fine, honestly, I don't measure, I just use a big scoop from a teaspoon and plop it on the cookie sheet.  No rolling or measuring required!

Thank you.  I will definitely make these.  Maybe use some chocolate or caramel chips in place of raisins.
