I am eating a low carb diet.  So coconut flour is a lot lower in carbs than wheat flour.  Cornstarch would be too high.  But thanks for your suggestion!

I too eat low carb and honestly prefer almond to coconut flour. I do try to use coconut flour more as it is much cheaper and lower in calorie and you use soooo much less of it. It’s s work in progressSmiley Happy. For breading chicken I usually use a combination of almond flour and Parmesan cheese.
