When I saw this recipe on Tasty Kitchen the other day-I couldn't WAIT to get into the kitchen and give it a try. As Aimee said, imagine the possibilities? Instant pudding mix in Rice Krispie Treats? This woman is a GENIUS!!!!!!!!!!!!
I decided to give these bars a test run using instant coconut cream pudding mix. Since we love coconut, I also toasted some sweetened flaked coconut to stir in with the cereal.
I picked up the marshmallows yesterday for these because I wanted to be sure they were fresh. Marshmallows that are a little stale can result in dry and hard Rice Krispie treats (ask me how I know that).
I did learn something while reading Aimee's version...if you really press the cereal mixture into the pan, packing the mixture down, the bars can dry out and become hard. I never knew that! So I used a light and and pressed the cereal mixture in the pan this time. The bars are soft and chewy.
These went together very quickly and were ready to cut in about 30 minutes.The taste? WOW! The coconut flavor is subtle but you definitely know it's there. I may add a little of the LorAnn coconut oil to bump up the flavor a little next time. But man oh man, are these DELICIOUS.
I can't WAIT to start playing with different pudding flavors in Rice Krispie Treats.......this is such a fantastic idea.

COCONUT RICE KRISPIE TREATS

1/4 c. butter or margarine
1 (10 oz.) pkg. regular marshmallows
1 (4 serving size) pkg. INSTANT coconut cream pudding mix
6 c. crispy rice cereal
1 c. toasted flaked coconut
Lightly spray a 9" baking dish with nonstick cooking spray; set aside.
In a large saucepan or Dutch oven, melt butter over medium-low heat. Add marshmallows; stir over medium-low heat until marshmallows melt and mixture is smooth.
Remove from heat; add pudding mix and stir until mixture is smooth and well combined.
Immediately add cereal, stirring gently but quickly until cereal is coated with marshmallow mixture.
Lightly press the cereal mixture into the prepared pan. Cool, then cut into bars. Makes 16-20, depending on how large you cut them.
