Coconut Crisp Chicken

2-3 pounds chicken parts

1 egg..slightly beaten

1/4 teaspoon curry powder

1/4 cup melted butter

pinch of salt (or more to taste)

1/3 cup bread crumbs

1/3 cup frozen pineapple-orance juice concentrate...THAWED

2/3 cup flaked coconut

Sprinkle chicken with salt. Mix the egg with THAWED juice concentrate. In a bowl, mix bread crumbs, coconut and curry powder. Stir to mix well. Dip chicken pieces into the mixture. Shake off excess and then roll in the crumb mixture. Place chicken in a shallow pan skin side up. Drizzle melted butter over the top. Cover an bake at 350* for 30 minutes. Remove cover and bake for 30 minutes longer Or till cooked, browned and tender.
