20181012_134750.jpgBetty Crocker got into me so I made a cake.

 

I used Kittencal's Authentic No Refrigeration Bakery Frosting Recipe. Here is 1/2 the recipe. 

1 c shortening

1/4 c non dairy powdered coffee creamer

1/4 t almond extract

1/4 t vanilla extract

Beat the above in a  Kitchen Aid with wire whip til creamy.

Gradually beat in 1 pound of sifted powdered sugar

Then add 4 T to 6 T water until frosting reaches desired consistency.

Thanks for posting love coconut cake. My dad used to make some really yummy coconut cake. This is the recipe he used. It has to be refrigerated. It gets moister the longer you have it. It's so good.

 

Coconut Cake
 
1 yellow box cake mix with pudding
2 - 6 oz bags frozen coconut – thawed
2 c sugar
1 c milk
8 oz cool whip
 
Make cake per package directions.
On low to medium heat mix sugar & milk to slow boil, stir often
When it comes to a boil add 3 oz of crumbled coconut & stir
Don’t cool cake. Pour the sugar, milk, coconut mixture over cake
Sprinkle 3 oz coconut on cake
Cool cake on rack
When cool spread cool whip to cover, add other 6 oz crumbled coconut
Keep in the refrigerator.

My favorite coconut cake recipe includes blueberries and lemon sauce:

 

2 cups flour

1 cup sugar

1 tbsp baking powder

1/4 tsp salt

2 eggs

1 cup milk

1/2 cup oil

1 1/2 cups blueberries tossed with 2 tbsp flour

1 cup sweetened coconut

 

Sauce:

1/2 cup sugar

1 1/2 tbsp cornstarch

1 tsp grated lemon zest

1 cup water

1 tbsp butter

2 tbsp lemon juice

 

Mix flour, sugar, baking powder, and salt in big bowl.  Whisk eggs, milk, and oil in medium bowl.  Stir wet ingedients into dry ingredients until just moist.  Gently fold blueberries into batter.

Pour batter into greased 9X13" baking pan.  Sprinkle coconut on top of batter.  Bake for 20-25 mins. at 350 degrees until toothpick comes out clean.  Cool on wire rack.

 

Mix sugar, cornstarch, and lemon zest in small saucepan.  Slowly whisk in water to blend.  Boil over medium heat for 2 mins. until thickened, stirring constantly.  Stir in butter and lemon juice off heat.  Drizzle over cut pieces of cake (I like the sauce warmed).

My southern relatives use to make me coconut cake everytime I visited.  Loving memories.

 

Pepperidge Farm Frozen Coconut Layer Cake is the closest to the cake from scratch taste that I remember.

There is a great Coconut Cake that has been floating around one branch of my family for years.  EVERY year they bring it to the family reunion, but will NOT share the recipe!  A real no no at our reunions. We are 2nd cousins, but they keep saying, “Oh, no this is a family  recipe.”  

 

So, during the reunion last week, I was sitting with the family matriarch, and just “happened” to mention how much I’d love to have that recipe.  She said, “Well, I know they would be glad to share it with you.”  I said, “ Well, no mam, they just don’t seem to want to, they tell me it is a family recipe.”  She straightened up and said, “Well it was my Grandmama’s recipe.  Never you mind, I don’t have a copy because I don’t bake anymore, but next week I’ll just give Miss Cindy a call and tell her to get me a copy, and I’ll mail it to you. She’ll not say no to me, cause MY MAMA gave it to HER MAMA!”

The Coconut cake recipie died w/my mother's sisters.  My mother was the "baby" (menopause baby) & now the only one living.  No recipies were passed down to her because she was the "doll baby."<---- My mother's quote.

@Drythe: True but sad. My grandmother, Dads Mom made the best Mac & Cheese. Never shared the recipe. When we were at her house for Thanksgiving no one was allowed in the kitchen . She would prepare everyone plate and bring everything to the dinning room. My Mom and Bigmama loved to have anyone in the kitchen, let us watch when a favorite dish was cooked and provide a copy of the recipe. I have tied several times to duplicate grandmothers recipe but never succeed plus no precious memories of being in the kitchen with her. I have precious memories of cooking with my Mom and Bigmama.
