I stuffed ours with some celery and onion bits and lots of lemon slices.  I also put a lot of the juice over the turkey itself, then butter mixed with herbs and salt under the skin along with the juice.  More butter herbs and salt rubbed on the outside.  It was fantastic.

That reminds me of this recipe:

Heat oven to 350 degrees

Rub butter or oil over the skin of the turkey until it is completely
coated.  Take a knife and gently separate the skin from the breast meat.
Slide lemon halves under the skin with the peel side up. This way the
Juice from the lemon will coat the breast. Season skin of turkey to
your preference, place sprig of rosemary into the chicken.

Cover and place in oven for 3-4.5 hours. Remove cover and continue
to roast until juices run clear, basting every 15-20 minutes dependi
on the size of the bird.

If you've followed these steps correctly, your turkey should look like
the one in the picture.

The citrus brightens the taste of the turkey just as it does with  roasted chicken .

Love to  add different seasonings to  chicken or turkey .

When I have company , I've prepared my Turkey the traditional way  along with two types of stuffing - one with diced apples and the other  made the traditional way.
