Cinnamon-Toffee Chews
1 3/4 cups King Arthur Unbleached All-Purpose Flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/2 cup packed dark brown sugar
1/4 cup dark corn syrup
1 tablespoon milk
1/2 cup toffee crunch or butterscotch chips
1/2 cup chopped walnuts or pecans, optional
Directions
1) Preheat the oven to 325°F. Line two baking sheets with parchment paper, or grease lightly.
2) Combine the flour, baking soda, cinnamon, and salt.
3) In a separate bowl, beat the butter with the sugar until light and creamy.
4) Add the corn syrup, beating until combined.
5) Stir in the dry ingredient, then the milk and toffee crunch.
6) Scoop the dough a teaspoonful at a time onto the prepared baking sheets, (a teaspoon cookie scoop works well here), spacing them at least 1" apart.
7) Bake the cookies for 8 to 10 minutes, until they're firm around the edges. Remove them from the oven, and allow to cool slightly before serving.
Yield: about 4 dozen cookies.

I know everyone prefers tried and true recipes, and I have not made this actual recipe; I was browsing the King Arthur Flour website for recipes to try and found this. Sounds great so I thought I would share. Some of you have probably already made them. Enjoy. I will be making these soon.

I have copied this recipe and will make these cookies and add them to my Christkindl Market array of flavors. I think I may use butterscotch chips instead of toffee. Have you made these with peanut butter chips? Or a combo of butterscotch and PB chips?

I made a test batch of these cookies and just took the last tray from the oven. I used butterscotch bits and 1/4 cup walnuts and 1/4 cup pecans. I did not have dark corn syrup on hand so substituted with 1 teas. molasses and filled to 1/4 cup with light corn syrup.
The cookies are delicious and yielded 3 dozen. I baked each tray 8 minutes. I will surely make these again. DH loves them too.
I will definitely add these cookies to my Christkindl Market bakeoff.

Thanks so much for reporting back. I still haven't begun my cookie baking, but may use your substitutions, as they sound delish. So glad they are really good.
