Our administrative assistant made our small department chicken tacos for lunch. They were very tasty and so nice of her to do. She wanted to repay us for treating her last week on administrative assistant's day which was not necessary for her to do.

I wasn't feeling too good - arthritis was acting up. I wanted to do something for this day. I thawed some really good beef & bean burritos. Poured some green enchilada sauce in the bottom of the baking dish (just enough to cover the bottom). Put the burritos on top of the sauce. Poured some of the sauce over the burritos to cover. A few tbsp. of salsa on top and then shredded colby jack cheese on top. Baked at 375 (covered) for about 20 min, uncovered and baked another 10-15 min. till bubbly. I call them enchiritos! Served with some rice and beans. It was yummy.

I made this for my son, dil and granddaughters. They loved it! Thanks for the recipe. I also made cilantro lime rice, pico de gallo and a peach cobbler with ice cream. It was a big hit!
I boiled my chicken breasts with a couple of garlic cloves, half an onion, piece of red pepper and a jalapeno pepper(seeds removed). I used chicken broth, cumin, salt and pepper to season it. I strained the broth and used it for the sauce. I shredded the cooked vegetables with the chicken and put a little of the broth over the chicken to keep it from getting dry. Next time when I boil the chicken, I may add a little cilantro too! ¡Ole! 🌮 💃🏽

@Starpolisher thank you so much for letting me know it was a hit. I've made it so many times but next time I want to try boiling the chicken and adding all the extras to give it more flavor. Yum peach cobbler sounds so good. I need to make that soon. I hope you keep the enchilada recipe and it becomes a family favorite!

Your recipe sounds delicious! 😋 I'm going to try it this week. Question though, What does it mean "scale" under the ingredients? Does that mean, "more or less" according to how much you want to make?
Yes @Starpolisher I think that's what it means. I usually add more chicken and cheese than it asks for in the recipe. I've also used larger corn tortillas (you may have to microwave them a bit to get them soft first so they don't fall apart before you get the sauce on). I like them both ways.
