Any plans for Cinco de Mayo?  I'm having a few family members for dinner. Will make these White Chicken Enchiladas, a salad and margaritas. I just buy a roasted chicken from the store so it's really easy and so good.

@simplyfriends - Your recipe sounds amazing! We're actually going out because it's going to be a very busy weekend, but we lived in Texas and we love Mexican food. I will definitely be trying this in the coming weeks!   Smiley Happy

There is no "single version" of Mexican food.   Mexico is a big country with many regions......and the style of food depends on WHERE the cook comes from!

We're having Carnitas,🌮 cilantro lime rice,🍈 pico de gallo, red beans, avocado 🥑corn on the cob🌽 and margaritas.🍹💃🏽

Your recipe sounds delicious! 😋 I'm going to try it this week. Question though, What does it mean "scale" under the ingredients? Does that mean,  "more or less" according to how much you want to make?

Since I'm unable to do any real chewing right now and need soft foods, I'm resorting omelets with sautéed onions, green chiles and Mexican blend cheese, topped with salsa, guacamole, and sour cream. Roasted asparagus and bacon on the side.

 

One of these days I'll ketofy your chicken enchiladas recipe and give it a try.  It sounds really good.

We are having Chicken Parmigiana. My husband volunteered to make it. So I am not going to say no.

My favorite place to celebrate Cinco de Mayo is San Antonio.  We would go to Mi Tierra Cafe, a Mexican food restaurant in the Market Square. It is lively with good food, live mariachi bands, and sometimes dancers. 

San Antonio knows how to party!
