"I've only posted here twice so I don't know if this has been shared already but here is a fast and easy hot meal that you can have on the table in 15 minutes. Great comfort food for cold or nasty weather."

White Chili

1 large or 2 small cans white beans

1 large jar of salsa (whatever heat you prefer)

1 store baked chicken (or leftover chicken you have)

1 bag tortilla chips

1 lb of shredded cheese (some use pepperjack but I use cheddar)

1 box of chicken broth or stock

Sour cream optional

Pull the chicken off the bone and discard bones and skin. Put in large pot and pour in beans with juice, the jar of salsa, and the chicken stock. Once it comes to a low boil crush handfuls of the chips into the pot. I usually start with about half a bag then add more if the chili needs thickening. Add half of the cheese until melted. Taste for seasoning and add salt and pepper if necessary.

Serve in a big bowl and top with more crushed chips, shredded cheese, and sour cream, if desired. This is a very hearty meal and my entire family loves it.
