This recipe is known as The Great Minnesota Hot Dish. I don't remember where I got the recipe but it's a good one for the days when I want some "Comfort Food". Reminds me of my grandmother making something like this in her old Dutch Oven. The house smelled so good when I walked in after school.
Chow Mein Hot Dish
1 pound ground beef
1/2 cup chopped celery
1/4 cup chopped onions
3/4 cup uncooked Minute Rice
1-1/4 cups boiling water
1/2 tsp. salt
1 can (10.75 oz.) condensed chicken and rice soup, undiluted
1 can (4 oz.) sliced mushrooms, drained
1 Tbsp. brown sugar
2 Tbsp. soy sauce
1 tsp. margarine
1-1/2 cups chow mein noodles
In a saucepan, over medium heat, stir and cook ground beef, celery, and onions until meat is browned; drain. Place rice in a lightly greased 2 quart baking dish. Pour boiling water over the rice. Stir in remaining ingredients except chow mein noodles. Cover and bake 30 minutes. Remove cover. Stir; bake uncovered 30 minutes. Stir in chow mein noodles just before serving. Serves 4.
