I have developed a yummy recipe. This is a great little dessert for low carbers.
1 can coconut milk
1.5 tbsp high quality unsweetened cocoa powder
1 tbsp unsweetened coconut flakes
2 packets stevia
1/4 cup chia seeds
1 tsp vanilla extract
Put all the dry ingredients in a bowl and whisk to blend. Add the coconut milk and vanilla and whisk. Put it in a covered container and let it set up several hours or overnight in the fridge. It will keep for a week.

This recipe brings to mind those silly Chia Pets. First time I've actually seen chia seeds called for in a recipe.

Chia seeds are very popular now. So is chia pudding, and not just for low carb eating. Chia seeds are highly nutritious and also very high fiber. They’re great in a smoothie, for some added nutrition. They are nearly flavorless therefore you can do a lot with them.

I copied it and will make it soon. We have everything but the coconut flakes, so I added them to our grocery list.
For some great recipes I go to KetoConnect. Our hands down favorite is the Almond Biscotti.
