Chocolate chip Oatmeal COOKIES-looking for a recipe

Any great recipes that are tried and true for Chocolate chip Oatmeal cookes?  Thanks.

I always follow the recipe on the Quaker oatmeal lid,  except I omit the raisins and cinn. and add chocolate chips and sometimes coconut.

@maximillian    Just pick any oatmeal raisin recipe that appeals to you and substitute chocolate chips for raisins.  Cookie baking is not an exact science.  You can do all sorts of substitutions.

These are really versatile.  I always double this recipe & freeze the extra cookies.

 

Cream together:

1/2 Cup shortening or butter

1-1/4 Cup sugar

2 eggs

1/3 Cup molasses

 

In another bowl combine:

1-3/4 Cup flour

2 Cups oats

1 teaspoon baking soda

1 (scant) teaspoon salt 

1 teaspoon cinnamon

 

Stir dry ingredients into wet, then add in nuts, chocolate chips, raisins, coconut, etc

 

Bake at 375 degrees for about 10 minutes

@maximillian I made these tonight and then saw your post.  They are some of the best I've ever eaten!  

 

I used a mixture of dried blueberries, dried cherries, and crasins for the fruit.  I didn’t make my cookies as big either.  They were wonderful! And so easy! 

 

Giada’s CHOCOLATE CHUNK OATMEAL COOKIES WITH CRANBERRIES

 

INGREDIENTS:

 

  • 1 cup all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 stick unsalted butter at room temperature
  • 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 1 large egg at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 2 cups old fashioned oats
  • 1 cup dried cranberries
  • 1 4-ounce 60 percent cacao bittersweet chocolate bar (recommended: Ghirardelli), chopped into 1/4-inch chunks (or dark chocolate choc. chips.)
  •  

INSTRUCTIONS:

  • Special equipment: a 4-ounce (1/2 cup) ice cream or cookie scoop
  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
  • In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a stand mixer fitted with a paddle attachment, beat the butter and sugars together until light and fluffy, about 1 minute. Add the the egg and vanilla and beat until smooth. 
  • With the machine running, gradually add the flour mixture. Add the oats, cranberries and chocolate chunks. Mix until just incorporated (dough will be stiff). 
  • Using a 4-ounce cookie scoop, scoop slightly rounded mounds of the dough into 12 (2-inch-diameter) balls. Arrange 6 balls of dough, spaced evenly apart, on each baking sheet. Using the back of a spoon, flatten the tops slightly and bake until the cookies are slightly golden on the edges, about 13 to 15 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before serving.

Tried and True for years......family favorite.  We always say they are "healthy" because of oatmeal in them.  😁 By the way, have you noticed price of chocolate-chips going up? (Like everything else!)

 

Oatmeal  Chocolate-Chip Cookies

 

1 cup butter (2 sticks), slightly softened to mix

3/4 cup sugar

3/4 cup brown sugar

1 1/2 teaspoons vanilla

2 eggs

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

2 cups Quick-Cooking Oatmeal

1 (12 oz) package chocolate-chips

 

Preheat oven to 350 degrees. 

Mix* together butter, sugar, brown sugar and vanilla.  Add eggs; mix.  Add flour, salt and baking soda; mix.  Add oatmeal; mix.  Add chocolate-chips; mix.  Place rounded spoonfuls (or cookie scoop full) on cookie sheet.  Bake 10-12 minutes.  Check at 10....if edges are getting brown and tops slightly brown....done!  (If you like crunchy cookies up to you to bake longer.) 

 

* I find it better if you do not over-mix ingredients.  Easy to let stand mixers go round and round but don't over do it.

I agree @walker 

 

I use my KA to cream the butter etc....then add the dry by hand.

 

That way the batter isn't over whipped.

@RespectLife I never have quick cooking oats in the house because I only buy old fashioned or thick cut.  They seem to work fine.

@RespectLife ....I don't think it would make a difference.  For some reason, I have always used the quick-cooking oatmeal....cookies come out really good so I figure I better stick with it.  I use Nestle Chocolate (semi-sweet) Chips too.  I have heard there is another brand (G) better but my family says....don't change anything!
