I really dislike frosting, because it's usually so cloyingly sweet...then I discovered this recipe. It's really good - very rich, and not too sweet. To save a bit on the calories, I use low fat sour cream...but don't even think of using margerine in lieu of butter!
Chocolate Sour Cream Frosting
1/2 cup butter
1/2 cup cocoa
3 cups confectioners sugar
1/2 cup sour cream
2 tsp. vanilla
In a small saucepan melt the butter. Add the cocoa, stirring constantly, until mixture is smooth and slightly thickened.
Transfer the mixture to a small mixing bowl and cool slightly.
Add the confectioners sugar alternately with sour cream; beat to spreading consistency.
Stir in vanilla.
Makes about 2 1/2 cups of yummy frosting.
