Yesterday, I'd made cupcakes that didn't turn out so well, so today I made this cake for a friend's birthday. I'm normally not too tempted by chocolate, but DH nearly had to pry this one out of my hands so he could deliver it.
It's two chocolate layers with peanut butter frosting in between and chocolate ganache over the top. It may not be the prettiest presentation, but omg.. it smelled like heaven😇 !
For the layers:
Hershey's Perfectly Chocolate Cake
2 cups | sugar |
1-3/4 cups | all-purpose flour |
3/4 cup | HERSHEY'S Cocoa |
1-1/2 teaspoons | baking powder |
1-1/2 teaspoons | baking soda |
1 teaspoon | salt |
2 | eggs |
1 cup | milk |
1/2 cup | vegetable oil |
2 teaspoons | vanilla extract |
1 cup | boiling water |
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
For the filling:
For the topping:
Standard chocolate ganache -
2 parts chocolate to 1 part cream

YUM!!! I know that's yummy. We love Hershey's Perfectly Chocolate Cake. Peanut Butter can only make it better IMO.
My mouth is watering now. Think I will go get a peanut butter cup.
I could eat that chocolate ganache alone.

Oh, you reminded me of a cake a former co-worker made. She is no longer with us, but she was like everyone's grandma. She would make her famous chocolate cake with peanut butter icing for everyone's birthday and special occasion. Nice memory, thanks. 🌹

@house_cat Yum, I can't eat cake, but I can eat PB frosting with a spoon. I use that very same recipe.
Now, I am hungry for some...your fault. I hope your friend enjoys the cake. i am sure it is delicious.

Isn't that an amazing recipe? It's similar to the filling of a PB cup, but 1000x better in my opinion - it's fluffy and not sickeningly sweet.

@house_cat I would have licked your beaters and scraped your bowl to get a taste. That was my job when I was a kid. I have a lot of experience.

@house_cat : I know I have put on 10 pounds just from viewing your goodies. Peanut butter and chocolate are my favorite and wish I could bake this one. You have some very lucky friends ...... sorry but I don't believe your cupcakes were not very good.....LOL.
