Chco-Nut Zucchini Bread
3 eggs
2 cups sugar
1 cup salad oil
2 oz unsweetened chocolate
1 tsp vanilla
2 cups grated zucchini
3 cups flour
1 tsp salt
1 tsp cinnamon
1/4 tsp baking powder
1 tsp baking soda
1 cup chopped almonds
In a mixing bowl, beat eggs and stir in sugar and oil. In a double boiler, melt chocolate over hot water. Stir chocolate, vanilla and zucchini into egg mixture.
In a separate bowl, combine flour with salt, cinnamon, baking powder and baking soda. Add dry ingredients to zucchini mixture. Add almonds and mix well. Pour into 2 well-oiled 9x5 loaf pans. Bake at 350 for 1 hour and 20 minutes or until loaves test done. Cool in pans for 15-20 minutes, then turn onto wire rack and cool thoroughly before slicing.
