Chinese Chicken and Broccoli

/><br/> <br/> On the rare occasion that we get Chinese take out....Chicken and Broccoli is always a dish that we pick-we just love it.....now I can make it at home.<br/> <br/> I love the ease of this recipe. There's not much slicing and dicing involved....just the chicken, garlic and broccoli. I had everything measured and ready to go once the pan went onto the stove.<br/> <br/> This cooked up so quickly...dinner was done in a flash.<br/> <br/> The chicken is moist and tender with just enough heat. We like our broccoli crisp-tender, which this is. I didn't measure the broccoli so probably got a little heavy handed adding it, hence not as much sauce as there could be but it's all good...there's plenty of sauce for us.<br/> <br/> This was my first time using oyster sauce....I was always leery of it since we don't like oysters but so many Chinese recipes call for it and people have told me it's one of the ingredients that gives Chinese dishes that special flavor. I decided to give it a whirl, and I'm VERY glad I did. CHINESE CHICKEN AND BROCCOLI

1 1/2 lb. boneless skinless chicken breasts (cut into small chunks)
1 1/2 Tbsp. sesame oil
2 Tbsp. garlic (chopped)
1/4 tsp. dried red pepper flakes (or more to taste)
4 c. fresh broccoli florets
6 Tbsp. chicken broth (divided)
1 Tbsp. sesame oil
Salt and pepper
1/4 c. hoisin sauce
3 Tbsp. oyster sauce
Sesame seeds (for garnish, optional)

Hot cooked white rice (I serve it with brown rice)

Heat a wok (or large skillet) over medium-high heat. Add 1 1/2 Tbsp. sesame oil, then add garlic and dried red pepper flakes. Stir-fry for 30 seconds. Add broccoli florets and 4 Tbsp. chicken broth; stir-fry broccoli for 2 minutes. Remove from pan; set aside.

Add 1 Tbsp. sesame oil to the wok. Season chicken pieces with salt and pepper. Add chicken to wok and stir-fry 3-5 minutes or until chicken is fully cooked.

Add remaining 2 Tbsp. chicken broth, oyster sauce, and hoisin sauce. Add broccoli; mix well and cook until the mixture heats through.

Serve with rice. Makes 3-4 servings.
